I want the subject line to default to an answer of a specific question. Can that be done?

The only way close to doing this would be use Subject Option #3:

Allow users to select from a series of predefined subjects using a dropdown.

You could then manually change the 'Subject' text on the form next to the drop down to a question, and use the various drop downs as answers.
