Am I able to set up 3x drop down boxes with subject options and have the subsequent queries then sent to 3 different email addresses? Rather than having to create three separate forms and try to amalgamate them.

You can place a field on the form that allows you to send to different emails based on the 'To' field, but not based on the subject. This is an option available under Edit > Send to Address.
