My question is... can i add an image like a coupon to my auto responder? I have a drawing that people sign up for and then they receive an auto reponder that thanks them for signing up. Now I want to leverage that opportunity by adding a coupon for them to redeem off the auto responder thank you email. What to you suggest I do to accomplish this?

The best way to accomplish this is to place a link to a URL within the auto responder that goes to the coupon page. You cannot add images to the auto responder.
