How can i change the character set of email sent in order to show properly special characters needed for spanish language?.
Following an example of what i'm getting:
"É" for "É"
"ó" for "ó"
...and so on.

I'm sorry, but this is not possible. There may be some sort of setting on your local computer that can do this which I am not aware of.
