Can an adjustment be made to where when a form is submitted, the ip addressed used is logged and sent with the email as well? Or is there a code I can enter to create this request in an existing form?

This is already included in each message that is sent. Look at the top of the form submission email. It should say something similar to:

Sent: MM/DD/YYYY at 02:27 AM from 103.135.134.75
